The top two August in-season foods you should be eating are Aubergines and Raspberries!

Why Aubergine?

Aubergines tend to have a purple, glossy skin and the inside is creamy/sponge like with small, edible seeds. However you can find them in other colours such as green, orange, yellow and in a range of shapes too. Aubergines are considered to be great for those who are trying to manage their diabetes or weight concerns because they’re high in fibre and low in fat. Nasunin is an antioxidant in the aubergine skin which protects the cells in our nervous system and the brain from any chemical damage.  They’re such a nutrient-dense food which is good for your heart and helps to protect against free radicals in your body.

Aubergines happen to be quite perishable so can alter in the heat or cold, so this means you have to store them in the refrigerator where they will keep for a few days. If you cut it before you store it fresh, it will decay at a much faster rate. Cooked aubergine can be stored in the fridge for up to 3 days.  

Why Raspberries?

Raspberries are soft, tasty and really good for you. They’re packed with vitamins, antioxidants and fibre. Raspberries and other berries have a high concentration of minerals, vitamins and antioxidants that protect your cells health and prevent free radical damage. With all the benefits, raspberries help to improve your skin health and strengthen your immune system. Because raspberries are rich in vitamin C which helps to reduce age spots and that unfortunate skin discoloration we sometimes suffer from.

Conclusion: Aubergines are such a versatile food that can be prepped and added to your diet in so many different ways. Simply look online and you’ll find a plethora of fun aubergine recipes. Raspberries are delicious and if those small nuggets have this many benefits, you’d be crazy not to add these to your fruit list every week. They’re great on and in cakes, a perfect snack on their own but can also be made into fruity smoothies perfect to pick you up on a rainy day or match your summer mood.
